SWEET POTATO BROWNIES W/ PEANUT BUTTER FROSTING

Happy 39 weeks pregnant to me! Celebrating by baking these sweet potato brownies with Poppy later today. They’re filled with yummy nutritious things but taste like boxed brownies. Make these today and let me know what you think!
1. Preheat your oven to 350°F and prepare an 8 x 8 baking dish by lining it with a sheet of parchment paper, set aside.
2. Add all the brownie ingredients except for the chocolate chips to a high-speed blender in the order listed, and blend on high until the batter becomes smooth, taking care to scrape down the sides with a silicone spatula. Once smooth, gently fold in dark chocolate chips.
3. Pour the batter into your prepared baking pan, using a spatula to distribute it evenly. Bake for 25 - 30 minutes. Remove the brownies from the oven and let them cool in the pan for about 15 minutes before transferring them to a wire rack to cool completely.
4. Combine all the frosting ingredients in a medium size bowl and mix until smooth. Top on these brownies (once they are cooled) or anything you’d like! ✨ I topped Joel’s birthday cake with this frosting last year and he loved it.
