Skillet Cornbread Shepard’s Pie

1. Preheat oven to 425°F.
2. Cook lean beef on a skillet, seasoning with garlic powder, black pepper, and cumin.
3. Once meat is almost cooked, add onion and carrots, and cook until carrots begin to soften.
4. Add 1 tablespoon Kodiak Cakes buttermilk pancake mix and stir. Then add beef broth, almond milk, and tomatoes. Let simmer for 5-10 minutes, stirring often.
5. Prepare cornbread as directed on the side of the Kodiak Cakes cornbread mix box (the author subbed half the butter for unsweetened applesauce!).
6. Once the beef mixture is done simmering, add it to a sprayed cast iron skillet. Top with the prepared cornbread mixture.
7. Cook for 30-35 minutes, or until the cornbread is golden brown on top.
8. Let cool for five minutes and dig in!
