Shepard’s Pie

Preheat oven to 350°F and spray a casserole dish with nonstick cooking spray. Set aside. Heat a large skillet on medium high. Add olive oil once the pan is hot and after the oil heats add in the veggies. Let sauté for five minutes before adding the ground beef and seasonings. Mix and cook until beef is ready. Prepare mashed potatoes by mixing all ingredients together with an immersion blender. Pour beef and veggie mixture into the prepared casserole dish and cover evenly with the cheesy mashed potatoes. Bake for 30 minutes or until the top is golden brown. Let cool slightly and enjoy!
