Peanut Butter Swirl Sweet Potato Brownies

1. Preheat your oven to 350°F and prepare an 8 x 8 baking dish by lining it with a sheet of parchment paper, set aside.
2. Add all the brownie ingredients except for the chocolate chips to a high-speed blender in the order listed, and blend on high until the batter becomes smooth, taking care to scrape down the sides with a silicone spatula. Once smooth, gently fold in dark chocolate chips.
3. Pour the batter into your prepared baking pan, using a spatula to distribute it evenly. Bake for 25 - 30 minutes. Remove the brownies from the oven and let them cool in the pan for about 15 minutes before transferring them to a wire rack to cool completely.
4. Combine all the frosting ingredients in a medium size bowl and mix until smooth. Top on these brownies (once they are cooled) or anything you’d like!
