I could eat this bowl of cauli-oats every day for the rest of my life and never get bored of it. It’s truly my most favorite recipe ever! Plus it’s so easy to make and even easier to eat. Who knew having vegetables for breakfast would be so fun?
Whisk together the water, egg white (if using) in a medium/large size microwavable safe dish. Stir in the chia seeds, riced cauliflower, cinnamon, and quick cooking oats until completely combined.
Microwave on high for two minutes, make sure to keep an eye on this because your oats can overflow. You may need to stop and mix if the mixture gets too close to the top. I like to use a larger bowl to cook the cauli-oats in and then pour into a smaller bowl for eating.
After the two minutes, mix in the powdered peanut butter and microwave again for one to two minutes.
Lightly stir and pour the cooked cauli-oat mixture into a smaller serving bowl if you’d like. Top with yogurt, banana slice, more peanut butter, brown sugar, and enjoy!
