Hi Friday and helloooo perfectly green cookies. These little guys are paleo, vegan, and absolutely delish. I’ve been going strong with my baking resolution this year. It’s been something I’ve wanted to do for many years and this year I’m finally doing it. I just might own a @kitchenaidusa mixture by the end of the year with how great baking is going.

Preheat the oven to 350F and line a baking sheet with parchment paper or a silicone baking mat. Stir together the almond flour, @aiyamatcha, maple syrup, coconut oil, pink salt, peppermint, baking soda, and vinegar. Gently fold in the chocolate chips. Scoop the dough onto a lined baking sheet, making roughly 12 cookies. Roll into a ball with your hands then press down lightly with the back of a fork. Bake the cookies until lightly golden, about 10 to 12 minutes. Cool for 15 minutes before serving.
