A fun and festive Gingerbread Superfood Snowman Pancake recipe, perfect for a Christmas morning breakfast. These pancakes are made with protein pancake mix and gingerbread spices, then decorated with a variety of toppings to resemble a snowman.
Heat a flat skillet on medium. Mix your dry pancake ingredients (pancake mix, cinnamon, ginger, nutmeg) together, set aside. Whisk your wet ingredients (milk, egg, molasses, vanilla extract) together and then mix into the dry ingredients until just combined. Let the mixture sit for 5 minutes to thicken up. Use a 1/4 cup measuring spoon to measure out the batter to make a snowman head. Then measure out 1/4 cup + 2 tablespoons of the batter to make the snowman's larger circular body. Let those cook and repeat with the remaining batter. Plate your snowman and decorate! Use unsweetened shredded coconut flakes for the snow, chocolate candies for buttons, a pretzel slim for the nose, banana slices for the scarf, and chocolate chips or chunks for eyes and mouth. Drizzle with syrup if desired.
