These Whole30 compliant chicken tenders are a satisfying and kid-friendly meal, perfect for lunch or dinner. Served with carrot fries, sautéed Brussels sprouts, and a lemon tahini drizzle, they make an exciting departure from boring meals.
Preheat oven to 425 F. In a small shallow bowl, crack egg and whisk. In a separate medium size bowl whisk together almond flour, coconut flour, and seasonings (garlic powder, freshly ground black pepper, Pink Himalayan sea salt, onion powder). Dip one chicken tenderloin in the egg wash, let excess egg drip off, then dip in the "breading" mixture, making sure the chicken is completely covered. Place breaded chicken on a baking sheet covered with tin foil and sprayed with nonstick cooking spray. Repeat steps with remaining chicken. Spray the tops of the chicken with cooking spray and bake in the oven for 25 to 30 minutes. Serve with carrot fries, sautéed Brussels sprouts, and a lemon tahini drizzle (combine 1/2 tbsp tahini, 2 tbsp fresh lemon juice, and garlic powder).
