Cranberry Whipped Feta Dip ✨

0 Add water and cranberries to a large pot. Bring to a boil - about 7 minutes until cranberries begin to pop.
1 Reduce to a simmer then add sugar, vanilla extract, cinnamon, cloves, nutmeg and orange zest.Simmer on high 3-5 minutes until fragrant then reduce to low for another 5 minutes. Remove from the heat and transfer to an airtight container or serve immediately.
2 Cranberry Whipped Feta Dip
3 In a bowl, stir together the cranberry sauce, orange zest, and orange juice. (Skip this step if using homemade cranberry sauce with orange already in it.) 
4 Add the feta and olive oil to a food processor and blend until crumbly.
5 Pour in the heavy cream and blend until creamy and smooth, stopping to scrape down the sides as needed. It’ll thicken before it gets smooth — keep blending!
6 Add 1 tablespoon of water at a time, if needed, until it reaches your desired consistency.
7 Transfer the whipped feta to a serving bowl and refrigerate for 15 minutes (or up to 3 days).
8 Top with cranberry sauce and chopped pistachios. Drizzle with hot honey and sprinkle with fresh thyme. Serve chilled or at room temperature with toasted bread or crackers.
