Cranberry Eggnog French Toast Bake For Two

Heat oven to 350°F. Spray a mini cast iron skillet with nonstick cooking spray. Set the sliced @thesolacompany sweet oat bread into skillet in an overlapping pattern. Whisk together wet ingredients, cinnamon, nutmeg, and sweetener in a small bowl. Pour mixture over bread and press down with the back of a spatula so the bread soaks up the mixture. Tuck cranberries between bread slices and sprinkle a little cinnamon over the top. Cover with foil and bake for 20 minutes. Uncover and bake for an additional 15-20 minutes or until the center is set. Let cool for ten minutes before covering with vanilla yogurt and peanut butter syrup drizzle (or plain maple syrup but everything tastes better with peanut butter in my opinion).
