A homemade take on Starbucks' Matcha Swirl Loaf featuring vanilla, matcha, and strawberry cake swirled together and topped with a sweet strawberry glaze. Soft, beautiful, and perfect for your next home café moment.
Preheat your oven to 350°F. Grease and line a loaf pan with parchment paper.
In a large mixing bowl, whisk together the flour, baking powder, and salt.
In a separate bowl, whisk together the melted butter, sugar, eggs, sour cream (or yogurt), and vanilla until smooth.
Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
Divide the batter evenly among three bowls.
Mix the matcha powder into one bowl.
Mix the freeze-dried strawberry powder into the second bowl.
Leave the third bowl plain (or just do matcha and strawberry)
Spoon alternating dollops of the matcha, strawberry, and vanilla batters into the prepared loaf pan. Use a butter knife to gently swirl the colors together, then smooth the top.
Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool in the pan for about 5 minutes before transferring it to a wire rack to cool completely.
