15 mins prepServes 12
A delicious recipe for baked donuts featuring cold brew, chocolate chips, and banana, topped with a chocolate glaze and @siggisdairy dried coconut & cacao nibs. Perfect for a busy week's snack or dessert.
Preheat oven to 355F. Add yogurt, nondairy milk, cold brew, bananas, dates, vanilla extract, chia seeds, and coconut oil to a high speed blender and blend on high until smooth. Whisk together remaining donut ingredients (pancake/waffle mix, baking powder, baking soda, cinnamon), except chocolate chips, in a bowl then slowly add the wet mixture. Blend on medium until smooth, about one minute. Slowly stir in chocolate chips. Spray a donut pan with nonstick cooking spray and equally divide batter into each mold. Bake for 18-20 minutes until golden brown around the edges. Let cool for five minutes then top with chocolate glaze (made from 1/4 cup melted chocolate chips, 2 tablespoons powder peanut butter, 1/2 tablespoon manuka honey, and 2 tablespoons unsweetened nondairy milk) and @siggisdairy dried coconut & cacao nibs simple sides. Enjoy!
