Don’t even tell me oatmeal cookies are bad because they aren’t! Appreciate them and all their goodness with my new chocolate chunk oatmeal cookie bars. These would be so fun for #Easter! Use pastel chocolate candies or chocolate eggs.
Preheat oven to 350°F and line an 8×8 baking dish with parchment paper. Spray the baking dish with non-stick spray first to help the parchment paper stay in place when pouring in the batter.
In a medium size bowl, combine oat flour, rolled oats, baking soda, and sea salt. Set aside.
In a large bowl, whisk together the Ground Up PDX classic smooth almond, cashew + coconut butter, melted coconut oil, and sweetener blend.
Whisk in two eggs or flax eggs and vanilla extract.
Add dry ingredients to wet and stir until well combined. Fold in 1/2 of the chocolate pieces. Try not to eat them all before topping with the remaining!
Pour and press evenly into bottom of baking dish. Top with remaining chocolate pieces.
Bake for 18-20 minutes or until toothpick inserted comes out clean. Remove from the oven and let cool slightly before devouring!
