At first glance these waffles look a little scary, but they were a huge hit in the Plotnik house. These charcoal lemonade waffles combine quick waffle mix with mushroom lemonade mix for a unique flavor, topped with coconut yogurt, cinnamon, and a sunflower seed butter maple syrup drizzle.

Instructions

1. Whisk the mushroom lemonade mix with 2 tablespoons of water and the egg white until the powder is completely dissolved.
2. Slowly mix in the quick waffle mix and the remaining 1 tablespoon of water.
3. Cook the batter in a waffle maker until golden brown and cooked through.
4. Top the cooked waffles with coconut yogurt, a sprinkle of cinnamon, the sunflower seed butter syrup drizzle (made by combining melted sunflower seed butter and maple syrup), and garnish with lemon slices.
