Cast Iron Mac and Cheese Bake for Two
15 mins prepServes 2
This cast iron mac and cheese bake for two could not have been more perfect. Made with Ripple Foods vanilla half & half for extra creaminess, chopped jalapeños for the kick, and homemade gluten-free bread crumbs for the crunch.
Preheat oven to 375 F. Spray a mini cast iron skillet and set aside. Cook pasta as directed on stovetop. Once pasta is cooked, drain, put pasta back in the pot, and set aside. In a small size sauce pan over medium heat, add butter and whisk until melted. Once butter is melted, add flour and whisk until fully combined. Then add Ripple Foods vanilla half & half and cheese. Continue to whisk often for five minutes or until the sauce is smooth. Combine diced jalapeño and cheese sauce to the cooked pasta, making sure the cheese sauce covers all the pasta. Place pasta in the sprayed cast iron skillet, sprinkle with GF breadcrumbs, and bake for 15-20 minutes. Once the bread crumbs are a golden brown, remove from oven and let cool slightly for 5 minutes. Grab a spoon and dig in!
