Almond Butter and Cacao Bliss Balls

Bliss balls are a trending snack, and these almond butter and cacao date balls are delicious and plant-based. They are made with Medjool dates, GF oats, cacao, almond butter, and maple syrup, then rolled in coconut or dark chocolate clusters.
In a food processor, pulse the pitted Medjool dates with the Ripple Foods unsweetened original until the mixture is smooth. Add the GF oats, unsweetened cacao powder, unsweetened shredded coconut flakes, almond butter, flax seeds, and maple syrup to the food processor. Pulse again until all ingredients are well combined. Use a tablespoon measuring spoon to scoop out portions of the mixture and roll them into 18 individual balls. Roll the finished balls into your chosen topping mixture (unsweetened coconut or dark chocolate clusters). Store the bliss balls in the refrigerator until you are ready to consume them.
